INGREDIENTS
- 1 lb Cajun-style sausage (andouille or spicy smoked sausage), sliced
- 1 package (20 oz) cheese tortellini (fresh or refrigerated)
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 ½ cups heavy cream
- 1 ½ cups shredded mozzarella
- ½ cup grated Parmesan
- 1 tsp Cajun seasoning (or more, to taste)
- Cracked black pepper, to taste
- Optional: diced jalapeño or roasted red peppers for added heat
- Chopped parsley or green onions, for garnish
INSTRUCTIONS
1. Preheat the Yoder Smoker: Set your Yoder YS640s to 350°F with a mild wood like pecan or maple for a smooth smoky finish.
2. Grill the Sausage: Place sliced Cajun sausage directly on the smoker grates or a flat top griddle. Grill until browned and slightly crispy around the edges. Remove and set aside.
3. Boil the Tortellini: Cook tortellini according to package directions in a pot of salted water. Drain and set aside.
4. Make the Alfredo Sauce on the Yoder: In a cast iron skillet on the Yoder grates, melt the butter. Add garlic and sauté for 1–2 minutes until fragrant. Stir in the heavy cream and bring to a gentle simmer. Gradually add in mozzarella and Parmesan cheese, whisking until melted and smooth. Season with Cajun seasoning and black pepper to taste.
5. Combine and Smoke: Add the cooked tortellini and sausage to the Alfredo sauce in the skillet. Toss to coat everything evenly. Optional: stir in jalapeños or roasted red peppers for an extra Cajun kick.
6. Smoke the Skillet: Let the assembled skillet sit uncovered in the smoker for 20–30 minutes to allow the sauce to bubble and absorb smoky flavor. Optional: top with a little extra cheese for a golden finish.
7. Serve and Garnish: Remove the skillet from the smoker. Let rest for 5 minutes, then garnish with chopped parsley or green onions. Serve hot and enjoy the creamy, smoky, spicy goodness!
Pro Tip: Use leftover sausage drippings to sauté the garlic for even more depth of flavor. Add a splash of pasta water to the sauce if you prefer a thinner consistency.
